游水 is a colloquial separable verb (离合词) meaning 'to swim', more informal than 游泳. As a separable verb, the 游 and 水 can split: you can insert an aspect particle (游了水, 游过水), a measure word (游了一次水), or a duration (游了半小时水) between them. You cannot put an object after 游水 directly — swim somewhere use 在…游水 or 游到….
