叟 (sǒu) is a bound form meaning 'old man'. It appears mainly in literary or compound contexts (e.g., 老叟 lǎosǒu elderly man, 叟童 sǒutóng old man and child). You rarely use 叟 alone in modern conversation; use 老人 (lǎorén) or 老爷爷 (lǎoyéye) instead.
