变成 (biàn chéng) means 'to turn into, become' and stresses a change of state or identity—the end result is different from the start. It is more complete and explicit than 变 (biàn, 'change'), which often just signals a change, and it is more conversational than 成为 (chéng wéi), which is used for formal roles or titles (e.g., becoming a doctor).
